Pumpkin Curry Haloumi Bowls!
Recipe:

Ingredients:
-2 Coles brand pumpkin curry veggies burgers
-1 slice of Green Vie vegan haloumi
-1 cup of jasmine rice
-1 tsp of spirulina
-olive oil
-2 tbls of nuttelex vegan butter
-BBQ seasoning
-2 large portobello mushrooms
-1 zucchini
-1 small head of broccoli
-a large handful of kale
-Spiral Foods tomato fungi pasta sauce
Directions:
1. put rice in pot with 2 cups of water, cook as per usual
2. slice mushrooms and cook in butter and BBQ seasoning
3. once mushrooms are cooked, add in rest of the veggies along with some extra seasoning and olive oil if needed
4. while veggies are cooking, slice burger in half horizontally to make 4 Pattys and fry in olive oil (sometime they will turn into burger crumbs- but that's okay!)
5. once Pattys are cooked, remove from heat. Then slice the piece of haloumi horizontally to make 2 slices. Fry slices in pan to soften them.
6. once slices are soft, cut them into strips
7. remove rice from heat once the water is gone and stir in spirulina
8. serve rice into a bowl and add some tomato sauce. Then add veggies on top. Then add a burger slice or crumbs on next. Finally, add haloumi slices on top while they are still hot. Add more sauce if desired.
